Thanks Selviem, for the nice words and post.
Glad you will be trying out the chocolate muffins.
Ah, we should try Dev's tip in using kasuri methi for the dal.

SALT PEPPER TOFU ( Kugan)
Friends, during our last month's visit to Singapore, we stayed in the Marina Bay Sands Hotel, which is a five star hotel.
During lunch time my friends went looking for a Chinese Vegetarian Restaurant in the hotel. I was not keen to have anything, as I do not feel comfortable eating in a Chinese restaurant. One of the items they ordered was salt pepper tofu..
The dish cost a fortune in that hotel. Here is the recipe for all my friends. Enjoy.
SALT AND PEPPER TOFU
Ingredients.
Marinate:
3 firm tofu cut into cubes
1 tsp plain flour
1 tsp corn flour
1 tsp soy sauce
¼ tsp white pepper powder
½ tsp garlic powder
Little salt
Oil for frying
2 tsp oil
1 big fresh red chillie, seeded and cut fine
2 pips of garlic chopped very fine
1 tsp coarsely ground black pepper
¼ tsp grated fresh ginger
2 tsp sliced scallions
Little soy sauce
Method:
Marinate the tofu in the above ingredients for 20 minutes.
Do not use any water.
Heat oil in a pan, shallow fry the tofu until golden.
Remove and keep aside.
Heat 2 tsp of oil in a pan, add in the chopped garlic.
Sauté well, add in the ginger, chopped red chillie,
Add in the fried tofu, the black pepper powder,
Soy sauce and the scallions.
Stir fry well for a minute and remove
